Biodynamic Olive Oil from le Marche

The Azienda Agrituristica Biodinamica produces several types of olive oil, their Olio delle Colle, one that is blended, some organic and also a smaller quantity of biodynamiccaly produced oil.

All the extra virgin olive oil is produced to the very highest standards and because they are very specialist olive oils they are only available in quite small quantities each year.

The olive oil is unfiltered and the sediment is left to settle out with the naturally in the months after the oil is produced in the winter, so the oil is available later than most other olive oils that are mechanically filtered. By producing oil in this way the falvour is further enhanced and a truely outstanding extra virgin olive oil is the result.

Biodynamic production of food really dates back to ancient times when farmers could only use the seasons and phases of the moon to gauge when to plant and harvest their crops. They had generally fallen out of use but these principles were properly reintroduced in the early twentieth century;

The three principles of Biodynamics are:
To maintain the fertility of the earth.
To grow and cultivate healthy plants so they can withstand the illnesses and parasites.
To produce food of the highest possible quality and goodness.

One of the basic concepts of biodynamics is, in fact, that of a farm being a "closed circle", a farm an organization in which little or nothing for the provision of materials and energy is from the outside. In this way the farm is able to obtain from within its own “circle” almost all the means that are needed for the growth of its own produce, this includes seeds, fertilizers, substances which can be used for the protection of plants against diseases and pests.

So by using biodynamic principles a farm will reduce to a minimum what is needed from the outside world to needing only such basics as fuel, mechanical implements and machinery.

The extra virgin olive oil produced by the Azienda Agrituristica Biodynamica has been growing in popularity in the past couple of years and we at Olivaverde were the first to import limited quantities in the UK and Ireland in 2008.
